The Role of Conservation in Farming

Conservation of plants is the main operation in agriculture. The harvesting and storage of cereals and potatoes is just as much conservation as the making of hay or silage.

So man has always stored grains or roots in "summer" to feed himself during the "winter". But the storage of winter feed for animals is much more recent.

Until the seventeenth century the consumption of meat and dairy products during winter was confined to butter, cheese and salted meat stored from the summer. Some forage stored as hay and straw was fed to the oxen kept for ploughing. Most sheep and pigs outwintered on rough grazing and in forests. Very few productive cattle or dairy cows were fed in winter and these only for the tables of the rich. This situation changed very slowly. A few farmers grew turnips, a few made better hay. The upsurge in demand for meat from the new industrial cities made it necessary to feed rather than to maintain animals in winter. However, this feeding was not based on conserved forages. Now modern farmers have large quantities of cheap grain from Europe and America, and oil - cakes from Russia and Africa. The farmers were able to develop livestock systems in which their animals grazed in summer but were fed on coarse fodders and " concentrates " in winter.
